Thank you, Italians, but from now on, we’re taking over. We’re proud to introduce this beloved sweet bread with a Croatian twist. We make it exclusively with wild yeast, which means the production process is very slow. But we don’t mind, because creating a better Panettone simply takes time. Specifically, it takes 4 days from mixing to packaging. This careful process gives it a longer shelf life and a unique open structure that melts in your mouth. And of course, it’s made without any additives!

Ingredients: Wheat flour T550, butter (milk), pasteurized egg yolk (chicken egg), sugar, dried raisins 9% (dried grapes, vegetable oil), candied lemon 7% (lemon peel, glucose-fructose syrup, sugar), candied orange 7% (orange peel, glucose-fructose syrup, sugar), cocoa butter, honey, salt, orange extract, vanilla extract (vanilla concentrate, vanilla seeds).

Topping: Almonds, granulated sugar, pasteurized liquid egg whites (egg), wheat flour T550, cornstarch, vegetable sunflower oil.

May contain traces of sesame.

Our secret ingredient – ​​time

DAY ONE

We love challenges and lengthy processes, which is why BoogieLab Panettone is produced exclusively with wild yeasts. We feed this starter a total of 3 times, around every 4 hours, before it reaches its top form – this is when we first mix the batch. After that, we eagerly wait for 18 hours while it sits and ferments.

DAY TWO

Now we add some more butter, eggs, and milk to the batch, creating basically the second version of it. When we are done mixing this second version, we let it ferment for another 2–4 hours before shaping it and letting it sit for the final fermentation process.

DAY THREEE

When the Panettone is finally ready, we send it off to bake. When it’s done, we turn it upside down and let it cool in this position. This is a necessity because the dough is so rich that it would otherwise collapse on itself. This way, the only ones collapsing are us.

DAY FOUR

After minimally 12 hours of cooling in this upside-down position, the Panettone is ready to be packaged into our specially designed boxes. This is the part where you come to pick it up and become the new favourite family member.

Pannetone vam je odličan, svake godine, svi okusi su bez greške! No dostavna služba je loša, obje kutije koje sam naručila došle su udubljene i zdrobljene na nekim stranama te je i panettone unutra bio ulegnut. To mi je problematično jer su kutije bile za poklon. Slala sam slike i prigovor na neki od vaših mailova, ali nažalost nije bilo odgovora. Mislim da za cijenu panettonea od 39 eura ipak trebate osigurati bolju i sigurniju dostavu, bolje osigurati pakete i barem odgovoriti na mail.

How many servings does one Panettone offer?

A 500 gram panettone is enough for 6-8 servings, and a 1 kg panettone is enough for 10-12 servings. We suggest cutting the panettone in half, without removing the cardboard mold, then cutting it into smaller slices and serving. To keep the panettone in its original juiciness, keep it tightly sealed in the bag it comes in. Store it at room temperature.

What is the shelf life of Panettone?

BoogieLab Panettone has a shelf life of 90 days, which we achieved by studying numerous studies and combining different dough fermentations. Such a shelf life is almost impossible for artisan Panettone, which is why almost all of them currently have a shelf life of up to a month. For the original juiciness, we recommend consuming within the first 45 days.

How soon should Panettone be eaten after baking?

Once the Panettone is baked, we recommend eating it within 10 days, provided that you keep it tightly sealed in the bag it arrived in.

Does Panettone contain preservatives or additives?

BoogieLab Panettone does not and will never contain preservatives or additives. This makes it a true artisan sourdough Panettone - the only one acceptable in our bakery. We were able to achieve all its benefits through a combination of traditional manufacturing and modern technology.

Do you offer delivery outside Croatia?

Yes, we offer delivery within the European Union, Switzerland and North America. The shipping price will be calculated during the payment step.
